I just got back from our Sunday School Chili Cook-Off party. And guess what. I won!!!!!! It was a close race, 1st, 2nd, and 3rd place were separated by 1 vote, among six or seven pots of chilies.

Marinated Smelt Recipe わかさぎのマリネ

子供のころ河口湖ではわかさぎがよくつれました。穴釣りしたり、または引き網で取っているところにいって漁師さんに安く分けてもらいました。そのわかさぎはマリネにして食べたのをよく覚えています。
わかさぎのマリネ
わかさぎ 20~30尾
たまねぎ 1個
にんじん 1本
マリネ液
砂糖 大さじ3
米酢 1カップ
だし汁 1カップ
酒 大さじ2
みりん 大さじ2
薄口しょうゆ 大さじ4
赤唐辛子の小口切り 1本分
塩 適量
酢 少々
薄力粉 適量
サラダ油 適量
1. わかさぎは塩水で洗ってザルに上げ、水気を切る。内臓はとらなくていい。
2. たまねぎは薄切り、にんじんは千切りにする。すべてバットに入れる。
3. 鍋にマリネ液の材料を入れて火にかけ、ひと煮立ちしたら 2のバットに注ぎ入れる。
4. 1のわかさぎの水気をよくふき取り、薄力粉を薄くまぶし、中温に熱したサラダ油でカラッと揚げる。
5. 4のわかさぎを熱いうちにバットに入れ、しばらく漬け込んでから器に盛る。
